Ingredients

  • 2 can BRUNSWICK° FLAKED TUNA with SMOKE FLAVOUR, drained
  • 4 baking potatoes
  • 1 cup mayonnaise
  • 1 cup cheddar cheese, grated
  • ¼ cup onion, chopped
  • ¼ cup pimentos, chopped
  • ½ cup chives, chopped
  • ¼ cup capers, chopped
  • 1 tbsp. dried parsley
  • 2 tbsp. complete seasoning

Directions

  • Wrap potatoes in foil and bake until fork tender, about one hour. Let cool
  • Split potatoes in half lengthwise and spoon the potato into a medium sized bowl leaving enough shell so the skin does not break when handling
  • Mash potatoes and add mayonnaise, ½ cup cheese, onions, pimentos, ¼ cup chives, cappers, parsley, complete seasoning, and BRUNSWICK° TUNA. Mix well
  • Stuff the potatoes with the tuna mixture and sprinkle with the remaining cheese
  • Place in a baking dish and bake for 20 minutes in an oven preheated to 350°F
  • Cool and garnish with remaining chives and serve with BBQ sauce
