Ingredients
- 2 can BRUNSWICK®° FLAKED TUNA with SMOKE FLAVOUR, drained
- 4 baking potatoes
- 1 cup mayonnaise
- 1 cup cheddar cheese, grated
- ¼ cup onion, chopped
- ¼ cup pimentos, chopped
- ½ cup chives, chopped
- ¼ cup capers, chopped
- 1 tbsp. dried parsley
- 2 tbsp. complete seasoning
Directions
- 1Wrap potatoes in foil and bake until fork tender, about one hour. Let cool
- 2Split potatoes in half lengthwise and spoon the potato into a medium sized bowl leaving enough shell so the skin does not break when handling
- 3Mash potatoes and add mayonnaise, ½ cup cheese, onions, pimentos, ¼ cup chives, cappers, parsley, complete seasoning, and BRUNSWICK®° TUNA. Mix well
- 4Stuff the potatoes with the tuna mixture and sprinkle with the remaining cheese
- 5Place in a baking dish and bake for 20 minutes in an oven preheated to 350°F
- 6Cool and garnish with remaining chives and serve with BBQ sauce
