Ingredients

  • 1 can BRUNSWICK ®FLAKED TUNA in OIL, drained
  • 7 Mini redskin potatoes
  • ¼ cup mayonnaise
  • ½ cup cheddar cheese, grated
  • ¼ cup green onion, chopped
  • ¼ cup red bell pepper, chopped
  • Salt to taste
  • Cherry tomatoes

Directions

  • Boil potatoes in a salted water for 20 min. Cut the potatoes in half lengthwise
  • Scoop the potato out of each half being careful not to break the skin. Mash potato in a bowl and add mayonnaise, ¼ cup cheese, onion, pepper, BRUNSWICK ®FLAKE TUNA, and salt
  • Stuff potato halves with mixture, and sprinkle with remaining cheese
  • Place in a baking dish and bake for 15 min. in an oven preheated to 350°F
  • Garnish with tomatoes
