Ingredients
- 1 can BRUNSWICK® FLAKED TUNA in OIL, drained
- 7 Mini redskin potatoes
- ¼ cup mayonnaise
- ½ cup cheddar cheese, grated
- ¼ cup green onion, chopped
- ¼ cup red bell pepper, chopped
- Salt to taste
- Cherry tomatoes
Directions
- 1Boil potatoes in a salted water for 20 min. Cut the potatoes in half lengthwise
- 2Scoop the potato out of each half being careful not to break the skin. Mash potato in a bowl and add mayonnaise, ¼ cup cheese, onion, pepper, BRUNSWICK® FLAKE TUNA, and salt
- 3Stuff potato halves with mixture, and sprinkle with remaining cheese
- 4Place in a baking dish and bake for 15 min. in an oven preheated to 350°F
- 5Garnish with tomatoes
