Ingredients

  • 1 can BRUNSWICK® MACKEREL in TOMATO SAUCE 155g, drained (save sauce) ¼ cup onion, diced
  • ¼ cup onion, diced
  • ¼ cup sweet pepper
  • ½ cup tomato, diced
  • 4 tbsp. granulated sugar or to taste
  • 3 tbsp. cane vinegar or to taste
  • ½ cup pineapple, diced (fresh or canned - drained)
  • 1 clove garlic, chopped

Directions

  • Place the onion, sweet pepper, tomato, sugar, vinegar, pineapple and pepper in a small sauce pan and simmer for 2 to 3 min.
  • Add the sauce from the BRUNSWICK® Mackerel and simmer for an additional 2 min.
  • Add garlic and BRUNSWICK® Mackerel. Stir and heat through
  • Serve with rice
