BRUNSWICK® SARDINES WITH PUMPKIN SEASONED RICE

Ingredients
- INGREDIENTS (RICE MIXTURE)
- 1 cup white rice
- 6 okras, diced
- ½ cup sweet pepper, diced
- ¼ cup onion, diced
- 1 cup potato, diced
- 1 lb pumpkin, diced
- 1 tsp. dry thyme
- 1 tbsp. scallion, chopped
- 2 tbsp. butter
- ½ cup mixed vegetables
- Salt and black pepper to taste
- INGREDIENTS (SARDINE MIXTURE)
- 2 cans BRUNSWICK® SARDINES IN SOYA OIL, drained
- 1 tbsp. of vegetable oil
- ½ cup onion, chopped
- ½ cup sweet pepper, diced
- 1 ½ cup tomatoes, diced
- 1 tbsp. scallion, chopped
- ½ tbsp. scotch bonnet pepper, grinded
- Salt to taste
Directions
- 1DIRECTIONS (RICE)
- 2Place a pot over medium heat with 2 cups of water. Add okras, sweet pepper, onion, potato, pumpkin, thyme, and scallion
- 3After ingredients are half cooked, wash rice and put in pot to cook with the other ingredients. Stir occasionally. Cook until rice is soft.
- 4DIRECTIONS (SARDINE MIXTURE)
- 5Add vegetable oil to a pan and heat a pan over medium heat and sauté onion, sweet pepper, tomatoes, scallion, and scotch bonnet pepper.
- 6Stir in BRUNSWICK® SARDINES and cook for 1 or 2 minutes. Add salt.
- 7Plate and enjoy!
