BRUNSWICK® SARDINE STUFFED CUCUMBERS

Ingredients
- 1 can BRUNSWICK® SARDINES in Spring Water, drained and de-boned
- 1 cucumber
- 1 tsp lime juice
- 1 pinch of salt
- 1 pinch of black pepper
- ½ cup tomato, diced
- 1 tbsp. red onion, diced
- 1 tsp parsley, finely chopped
Directions
- 1Cut the cucumber into ½ inche height pieces.
- 2Hollow out each piece ¼ inch from the base. Reserve inside pieces for the filling.
- 3Combine the Sardines, lime juice, salt and black pepper.
- 4Add tomato, parsley, red onion, along with the reserved pieces of cucumber.
- 5Combine all ingredients and stuff each cucumber sections.
- 6Garnish with parsley and serve as appetizers for any type of event.
