BRUNSWICK® SARDINE STUFFED CUCUMBERS

Ingredients

  • 1 can BRUNSWICK® SARDINES in Spring Water, drained and de-boned
  • 1 cucumber
  • 1 tsp lime juice
  • 1 pinch of salt
  • 1 pinch of black pepper
  • ½ cup tomato, diced
  • 1 tbsp. red onion, diced
  • 1 tsp parsley, finely chopped

Directions

  1. 1Cut the cucumber into ½ inche height pieces.
  2. 2Hollow out each piece ¼ inch from the base. Reserve inside pieces for the filling.
  3. 3Combine the Sardines, lime juice, salt and black pepper.
  4. 4Add tomato, parsley, red onion, along with the reserved pieces of cucumber.
  5. 5Combine all ingredients and stuff each cucumber sections.
  6. 6Garnish with parsley and serve as appetizers for any type of event.
