Ingredients

  • 1 can BRUNSWICK® SARDINES in Spring Water, drained and de-boned
  • 1 cucumber
  • 1 tsp lime juice
  • 1 pinch of salt
  • 1 pinch of black pepper
  • ½ cup tomato, diced
  • 1 tbsp. red onion, diced
  • 1 tsp parsley, finely chopped

Directions

  • Cut the cucumber into ½ inche height pieces.
  • Hollow out each piece ¼ inch from the base. Reserve inside pieces for the filling.
  • Combine the Sardines, lime juice, salt and black pepper.
  • Add tomato, parsley, red onion, along with the reserved pieces of cucumber.
  • Combine all ingredients and stuff each cucumber sections.
  • Garnish with parsley and serve as appetizers for any type of event.
