BRUNSWICK® TUNA SWEET CORN QUESADILLA

Ingredients
- INGREDIENTS (DOUGH)
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. brown sugar
- 1 tsp. yeast
- 1 cup water to knead a soft /medium dough
- INGREDIENTS (FILLING)
- 1 can BRUNSWICK® FLAKED TUNA with SWEET CORN
- 1 ½ cup cheddar Cheese, grated
- 2 tbsp. chives, chopped
- 1 clove garlic, finely chopped
- 1 tbsp. onion, diced
- ½ cup sweet pepper, diced
- ½ tbsp. hot pepper, finely chopped
- ½ lime, juiced
- ½ tsp salt
- 1 tsp black pepper
- 1 spring parsley for garnish
- lime slices for garnish
Directions
- 1In a large bowl, evenly mix dough ingredients; add water to form a soft to medium dough. Knead. Divide dough into four small balls and set asid
- 2In a medium bowl evenly combine BRUNSWICK® FLAKED TUNA with SWEET CORN, cheese, chives, garlic, onion, sweet pepper, hot pepper, lime juice, salt and pepper
- 3Roll out one ball of dough until thin and rounded, place Tuna filling on top, place another rolled out dough ball on top of the filling, covering it. Seal the edges by pinching around the quesadilla. Using a rolling pin, roll out the quesadilla to make it flatter and larger
- 4Add a small amount of vegetable oil to a skillet placed over medium heat and spread the oil over the bottom of the skillet
- 5Cook quesadilla in the skillet until medium brown on one side. Brush the uncooked side of the quesadilla with vegetable oil, flip and cook
- 6To serve garnish with parsley and lime slices
