BRUNSWICK® TUNA BREAKFAST MUFFINS

Ingredients
- 1 can BRUNSWICK® TUNA FLAKED in WATER, drained
- ½ cup butter, melted
- 1 egg
- 2 cups evaporated milk
- 1 ½ cups all-purpose flour
- 3 tsp. baking powder
- ¼ tsp. salt
- ¼ tsp. black pepper
- 1 tbsp. dried parsley
- 1 tbsp. all-purpose seasoning
- ¼ cup cheddar cheese, grated
- ½ cup tomato, chopped
- ¼ cup onion, finely diced
- 1 tbsp. pimentos, crushed
- 2 tbsp. chives, chopped
Directions
- 1Preheat oven to 375°F. Grease muffin tray (nine muffins).
- 2Whisk butter, egg and milk and set aside.
- 3Sift flour, baking powder and salt into a bowl. Add pepper, parsley, all-purpose seasoning, cheese, tomato, onion, pimentos, chives and BRUNSWICK® TUNA. Mix.
- 4Pour egg mixture into dry ingredients stirring gently until combined. Spoon mixture into prepared pan.
- 5Bake for 20 minutes.
