BRUNSWICK® ULTIMATE TUNA ACCRA

Ingredients
- 2 cans BRUNSWICK® FLAKED TUNA in WATER, drained
- 1 cup all-purpose flour
- 2 tsp. baking powder
- Salt to taste
- Pinch of sugar
- 2 cloves garlic, minced
- ¼ cup onion finely chopped
- 1 tsp. hot pepper, minced
- 1 tsp. all-purpose seasoning
- 2 Chadon beni or coriander leaves, chopped
- ¼ tsp. thyme, chopped
- 1 tsp. parsley, chopped
- ½ cup water
- 1 egg, beaten
- 1 cup vegetable oil for frying
Directions
- 1In a large bowl combine flour, baking powder, salt, sugar, garlic, onion, pepper, all purpose seasoning, Chadon beni, thyme, and parsley
- 2Stir in BRUNSWICK® TUNA. Add egg and water. Mix well until batter is thick
- 3Heat the vegetable oil in a deep pan over medium heat. When oil is hot, add heaping tablespoonful of Tuna mixture. Cook approximately two minutes on each side until golden brown
