Brunswick® Tuna Seasoned Rice

Ingredients
- 1 can BRUNSWICK® TUNA Flaked in Oil or Water, drained
- 1 tbsp. butter
- 3 pimento seeds
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 4 tbsp. scallion/escallion, chopped
- ½ scotch bonnet pepper, deseeded and chopped
- 2 cups pumpkin, grated
- 3 vegetable bouillon cubes
- 3 cups water
- 2 cups rice
- 1 sprig thyme, chopped
Directions
- 1Heat butter in medium pot. Sauté pimento seeds, pepper, onion, garlic, scallion and pumpkin.
- 2Add crushed vegetable bouillon, rice and water. Bring to a boil, then reduce heat and simmer for 20 minutes until rice is tender and moisture is absorbed.
- 3Stir in BRUNSWICK® TUNA and garnish with thyme.
