1 can BRUNSWICK® TUNA Flaked in Oil or Water, drained
1 tbsp. butter
3 pimento seeds
1 small onion, chopped
2 cloves garlic, chopped
4 tbsp. scallion/escallion, chopped
½ scotch bonnet pepper, deseeded and chopped
2 cups pumpkin, grated
3 vegetable bouillon cubes
3 cups water
2 cups rice
1 sprig thyme, chopped
Directions
Heat butter in medium pot. Sauté pimento seeds, pepper, onion, garlic, scallion and pumpkin.
Add crushed vegetable bouillon, rice and water. Bring to a boil, then reduce heat and simmer for 20 minutes until rice is tender and moisture is absorbed.
Stir in BRUNSWICK® TUNA and garnish with thyme.
